Anyone who knows me well will tell you I’m an awful cook with exception to my homemade vegetable soup – it’s whopper if I do say so myself. If I was to be completely honest, I would say I don’t really enjoy cooking at all – for me, it’s a chore. And then of course with four smallies I struggle to find meals they will all eat. There is nothing worse than slaving over the stove for one, two or all of them to turn their noses up at the food you’ve just made. So that is Mealmakers came in.
While this is a collaboration, it’s probably been the easiest one I’ve ever done. For example, when the sachets arrived Joe’s words were “oh, were they on offer this week?”, thinking I stockpiled as I’ve done in the past.
This recipe is a recipe I’ve used for over 2 years. It’s nothing new and it’s eating by all (except me, I’m a vegetarian) with absolutely no complaints. It’s convenient, it’s versatile and it’s full of flavour. I don’t always use pasta, sometimes I mix it up by adding a couple of diced potatoes into the dish or I make some mash on the side. It all really depends on what humour I’m in.
Chicken Casserole with Pasta (feeds 8)
Ingredients:
3 carrots
2 parsnips
Celery
Onion
5 chicken fillets
2 x Knorr Chicken Casserole Mealmakers
3 cups of pasta
Clove of garlic
Method:
Preheat oven to 180C or gas mark 4
Dice chicken into large chunks (or get your butcher to do it as I do!) and fry off the chicken in some olive oil and a clove of garlic
Chop vegetables and place in a large casserole dish alongside the chicken
Mix the 2 Knorr Chicken Casserole recipe mixes with 800mls of cold water and add to the dish the pop into the oven. After 30 minutes give the dish a little stir and cook for a further 30 minutes.
Cook the pasta to add once your meal is complete… and voila.
Top tip: If I’m stuck for time and know it is going to be a long busy day I sometimes lash all the above straight into the slow cooker on low for 8 hours. I always cook the pasta separately.
